Ingredients
  

For the Fritters
  • 2 cups all-purpose flour Use fresh for even texture.
  • 2 tsp baking powder Ensure it’s fresh for proper lift.
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg Optional.
  • 1/2 cup granulated sugar
  • 2 large eggs Fresh eggs improve flavor and texture.
  • 1 cup milk (whole or 2%) For richer flavor, use whole.
  • 2 tbsp unsalted butter, melted Should be slightly cooled.
  • 1 tsp vanilla extract
  • 2 medium apples (about 1 1/2 cups diced) Choose sweet-tart varieties like Fuji or Honeycrisp.
For the Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp milk or lemon juice For creating the glaze.

Method
 

Preheat and prep
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat.
Mix dry ingredients
  1. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and granulated sugar until well combined.
Combine wet ingredients
  1. In another bowl, beat the eggs, then whisk in the milk, melted butter, and vanilla extract.
Make batter
  1. Pour the wet ingredients into the dry ingredients and fold gently with a spatula until mostly smooth. Do not overmix.
Fold apples
  1. Gently fold in the diced apples until they are evenly distributed throughout the batter.
Portion fritters
  1. Use a cookie scoop or two spoons to drop 2-3 inch mounds onto the prepared baking sheet, leaving space between each.
Bake
  1. Bake for 15-18 minutes, until the tops are golden brown and a toothpick inserted in the center comes out mostly clean.
Cool slightly
  1. Let the fritters rest on the tray for 5 minutes, then transfer them to a cooling rack.
Make glaze
  1. In a bowl, whisk together the powdered sugar and milk or lemon juice until smooth and pourable.
Glaze
  1. Spoon the glaze over the warm fritters or dip the tops in it, allowing it to set.

Notes

Store fritters in an airtight container for up to 1 day at room temperature, or refrigerate for up to 3 days with wax paper between layers. Freeze unfrosted fritters for up to 2 months. Reheat gently in the oven for best texture.
