Ingredients
  

For the Onions
  • 2 large sweet onions (Vidalia or Walla Walla) Choose medium-sized, heavy onions with dry skins.
For the Batter
  • 1 cup all-purpose flour
  • 1/3 cup cornstarch For extra crispiness.
  • 1 teaspoon baking powder To create air bubbles.
  • 1 cup buttermilk For better adhesion and taste.
  • 1 teaspoon paprika For color and mild flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder Enhances onion flavor.
  • 1/4 teaspoon cayenne pepper Adjust to taste.
  • 1 teaspoon salt For flavor enhancement.
For the Dry Coating
  • 1 cup all-purpose flour Use the same as batter.
  • 1/3 cup cornstarch For a lighter texture.
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Cut onions into quarters through the root, then into 1-inch segments.
  2. Soak onion pieces in ice-cold water for 30-60 minutes to reduce sharpness.
  3. Pat dry to remove moisture, dust lightly with flour.
Battering and Coating
  1. Mix together the wet batter ingredients in one bowl.
  2. In another bowl, mix the dry coating ingredients.
  3. Dip onions into the wet batter, then coat in the dry mixture. For extra crunch, repeat the process (double-dip).
Cooking
  1. Heat oil in a deep fryer or heavy pot to 350°F (175°C).
  2. Fry onion bites in batches for 2-3 minutes until golden brown.
  3. Drain on paper towels and serve hot.

Notes

Serve with a variety of dipping sauces like Spicy Mayo or Classic Awesome Blossom Sauce. Can be made in advance and reheated.
