Preparation
- Cut onions into quarters through the root, then into 1-inch segments.
- Soak onion pieces in ice-cold water for 30-60 minutes to reduce sharpness.
- Pat dry to remove moisture, dust lightly with flour.
Battering and Coating
- Mix together the wet batter ingredients in one bowl.
- In another bowl, mix the dry coating ingredients.
- Dip onions into the wet batter, then coat in the dry mixture. For extra crunch, repeat the process (double-dip).
Cooking
- Heat oil in a deep fryer or heavy pot to 350°F (175°C).
- Fry onion bites in batches for 2-3 minutes until golden brown.
- Drain on paper towels and serve hot.
Notes
Serve with a variety of dipping sauces like Spicy Mayo or Classic Awesome Blossom Sauce. Can be made in advance and reheated.
