Ingredients

Pudding Base
  • 1 cup almond milk Use unsweetened almond milk for better control of sugar.
  • 4 tbsp almond butter Choose almond butter with only almonds and salt for the cleanest taste.
  • 1.5 tbsp maple syrup Use real maple syrup for a natural flavor; avoid maple-flavored syrups.
  • 1 pinch sea salt Enhances flavor and aroma.
  • 5 tbsp chia seeds Choose high-quality organic chia seeds.

Method

Preparation
  1. In a mixing bowl, combine almond milk, almond butter, maple syrup, and a pinch of sea salt. Whisk until smooth.
  2. Stir in chia seeds until well distributed.
  3. Let the mixture sit for about 10 minutes, then whisk again to prevent clumping.
  4. Cover and refrigerate for at least 3 hours or overnight until it thickens.
Serving
  1. Serve chilled, topped with fruits or nuts if desired.

Notes

This pudding can be made ahead of time and stored in the fridge for up to 4-5 days. For a thicker consistency, consider adding extra chia seeds.
