Ingredients

Main Ingredients
  • 1 lb Italian sausage (mild or spicy, depending on preference) Opt for high-quality sausage for richer flavor.
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth Homemade broth enhances flavor.
  • 1 cup heavy cream Can substitute with plant-based alternative.
  • 1 can (14.5 oz) diced tomatoes, drained No need to peel.
  • 1 cup ditalini pasta (or small pasta of choice) Small pasta shapes can be used as substitutes.
  • 2 cups fresh spinach, chopped Gives vibrant color and nutrition.
  • 1/2 cup grated Parmesan cheese (plus extra for garnish) Real Parmesan enhances creaminess.
  • Salt and black pepper, to taste Adjust seasoning as needed.
  • Fresh parsley, chopped (for garnish)

Method

Preparation
  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces, about 5-7 minutes.
  2. Remove the sausage and add diced onion and garlic to the same pot. Sauté for 2-3 minutes until softened and fragrant.
  3. Pour in the chicken broth and bring to a simmer. Stir in diced tomatoes and return the cooked sausage to the pot. Add ditali pasta and cook according to package instructions (about 8-10 minutes).
  4. Once pasta is nearly done, stir in heavy cream, Parmesan cheese, and fresh spinach. Simmer for another 2-3 minutes until spinach is wilted.
  5. Taste and adjust the seasoning with salt and black pepper as needed.
  6. Ladle into bowls and garnish with extra Parmesan and chopped parsley.
