- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup lemon curd
- 2 large eggs
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract

- Sugar for brûlée topping
Instructions
- Preheat oven to 350°F (175°C).
- Cream butter and sugar until light and fluffy.
- Beat in lemon curd and eggs until smooth.
- Mix flour, baking powder, and salt in another bowl.
- Add dry mix to wet mix until just combined.
- Drop spoonfuls of dough on a baking sheet.
- Bake for 10–12 minutes until edges are lightly golden.
- Cool the cookies fully.
- Sprinkle sugar on each cookie and caramelize with a kitchen torch.
- Let the burnt sugar cool and harden before serving.
Notes
For best results, use room temperature butter and eggs. Cool cookies fully before adding sugar to ensure even caramelization.
