Ingredients

  • 1 cup granulated sugar
  • 1 cup lemon curd
  • 2 large eggs
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Sugar for brûlée topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until light and fluffy.
  3. Beat in lemon curd and eggs until smooth.
  4. Mix flour, baking powder, and salt in another bowl.
  5. Add dry mix to wet mix until just combined.
  6. Drop spoonfuls of dough on a baking sheet.
  7. Bake for 10–12 minutes until edges are lightly golden.
  8. Cool the cookies fully.
  9. Sprinkle sugar on each cookie and caramelize with a kitchen torch.
  10. Let the burnt sugar cool and harden before serving.

Notes

For best results, use room temperature butter and eggs. Cool cookies fully before adding sugar to ensure even caramelization.
