- 1 lb Italian sausage
- 2 cups white beans (canned or dried)
- 1 onion, chopped
- 1 carrot, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 cups spinach, fresh
- 4 cups chicken or vegetable broth
- 2 tbsp olive oil
- 1 tsp dried herbs (oregano, thyme)
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion, carrot, and celery; sauté until softened.
- Add minced garlic and Italian sausage, cooking until the sausage is browned.
- Stir in the white beans, broth, dried herbs, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add fresh spinach and cook until wilted.
- Adjust seasoning as needed and serve warm.
Notes
Use good quality broth for better taste. Brown the sausage well for added flavor.
