Comforting Thai Potsticker Soup for Cozy Nights In

A warm and simple potsticker soup that combines coconut, lime, and ginger for a cozy meal.

  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 12 pieces Potstickers (homemade or frozen)
  • 4 cups Chicken or Vegetable Broth
  • 1 tablespoon Fresh Ginger (minced)
  • 3 cloves Garlic (minced)
  • 1 can Coconut Milk
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Fresh Lime Juice
  • 1/4 cup Cilantro (chopped)
  • 1/4 cup Green Onions (sliced)

Instructions

  1. Heat a medium pot over medium heat. Add a splash of oil if potstickers are raw and need frying.
  2. Add minced ginger and garlic. Cook for 30 seconds until fragrant.
  3. Pour in 4 cups of broth and bring to a gentle boil.
  4. Add potstickers and cook until they float and are heated through (about 5–7 minutes).
  5. Reduce heat to low, stir in coconut milk, soy sauce, and lime juice. Warm gently, avoiding hard boiling.
  6. Adjust salt or lime to taste.
  7. Off heat, stir in chopped cilantro and sliced green onions. Serve hot.

Notes

Use good broth for better flavor. Add lime juice at the end for brightness.
