Thai Mango Cucumber Salad

A refreshing salad bursting with the flavors of ripe mangoes, crisp cucumbers, and zesty dressing, perfect as a side or light main course.

Ingredients

  • 1/2 tsp Chili flakes
  • 1/4 cup Cilantro, fresh
  • 1 large Cucumber
  • 2 ripe Mangoes
  • 1 Red bell pepper
  • 1/4 cup Red onion
  • 1 tbsp Fish sauce
  • 1 tbsp Honey
  • 2 tbsp Lime juice

Instructions

  1. Peel and slice the mangoes and cucumber into bite-sized pieces.
  2. Dice the red bell pepper and red onion.
  3. In a large mixing bowl, combine the mangoes, cucumber, red bell pepper, and red onion.
  4. In a small bowl, whisk together the fish sauce, lime juice, honey, and chili flakes.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Garnish with fresh cilantro before serving.

Notes

Serve chilled or at room temperature. Best enjoyed fresh within two days.
