Tasty Keto Jalapeno Popper Bites

Delicious low-carb Jalapeno Popper Bites that are packed with flavor and perfect for snacks or appetizers.

Ingredients

  • 1/4 cup Bacon bits
  • 2 cups Pork rinds
  • 1/4 tsp Garlic powder
  • 3 Jalapenos
  • 1/4 tsp Onion powder
  • 2 large Eggs
  • 8 oz Cream cheese
  • 1 tbsp Heavy cream
  • 2 cups Monterey jack cheese, grated

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the jalapenos in half lengthwise and remove the seeds.
  3. In a mixing bowl, combine the cream cheese, heavy cream, bacon bits, garlic powder, onion powder, and eggs. Mix until smooth.
  4. Fill each jalapeno half with the cream cheese mixture.
  5. Crush the pork rinds and sprinkle them over the filled jalapenos.
  6. Top with grated Monterey jack cheese.
  7. Place on a baking sheet and bake for 20-25 minutes or until the cheese is bubbly and golden.
  8. Let cool slightly before serving.

Notes

Serve warm with ranch or sour cream for dipping. Store leftovers in an airtight container for 3-4 days in the refrigerator.
