Taco Lasagna

A delicious fusion of Mexican and Italian cuisines, Taco Lasagna layers tortillas with seasoned meat, cheese, and fresh vegetables for a comforting meal.

Ingredients

  • 1 lb ground beef (or chicken)
  • 1 packet taco seasoning
  • 1/2 cup water
  • 912 tortillas (or taco shells)
  • 2 cups cheese blend (cheddar, Monterey Jack, mozzarella)
  • 1 cup salsa
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers

Instructions

  1. Brown the ground beef in a skillet over medium-high heat. Drain fat.
  2. Add taco seasoning and water to the skillet, simmer until thickened.
  3. In a 9×13-inch dish, start layering with taco sauce at the bottom.
  4. Place a layer of tortillas or taco shells.
  5. Add half of the meat mixture and half of the cheese on top of the tortillas.
  6. Repeat the layers: tortillas, meat, cheese. Top with remaining cheese.
  7. Cover with aluminum foil and bake at 375°F (190°C) for 30 minutes.
  8. Remove foil and bake for another 10-15 minutes until cheese is bubbly.
  9. Let it cool for a few minutes before slicing and serving.

Notes

For a vegetarian version, replace meat with black beans or roasted vegetables. Allow for cooling time to set the cheese before serving.
