Ingredients

- 1 lb ground beef (or chicken)
- 1 packet taco seasoning
- 1/2 cup water
- 9–12 tortillas (or taco shells)
- 2 cups cheese blend (cheddar, Monterey Jack, mozzarella)
- 1 cup salsa
- 1 cup diced tomatoes
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
Instructions
- Brown the ground beef in a skillet over medium-high heat. Drain fat.
- Add taco seasoning and water to the skillet, simmer until thickened.
- In a 9×13-inch dish, start layering with taco sauce at the bottom.
- Place a layer of tortillas or taco shells.
- Add half of the meat mixture and half of the cheese on top of the tortillas.
- Repeat the layers: tortillas, meat, cheese. Top with remaining cheese.
- Cover with aluminum foil and bake at 375°F (190°C) for 30 minutes.
- Remove foil and bake for another 10-15 minutes until cheese is bubbly.
- Let it cool for a few minutes before slicing and serving.
Notes
For a vegetarian version, replace meat with black beans or roasted vegetables. Allow for cooling time to set the cheese before serving.
