Sweet Chocolate Chip and Toffee Shortbread Cookies

Ingredients

  • 2 cups All-purpose flour
  • 1 cup Mini chocolate morsels
  • 1/2 cup Confectioners’ sugar
  • 2 tsp Vanilla extract
  • 1 cup Salted butter, softened
  • 1/2 cup Toffee pieces

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and confectioners’ sugar until smooth.
  3. Add the vanilla extract and mix well.
  4. Gradually add the flour, mixing until just combined.
  5. Fold in the chocolate morsels and toffee pieces.
  6. Roll the dough into balls and place them on a baking sheet lined with parchment paper.
  7. Flatten each ball slightly with the back of a fork.
  8. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

For chewier cookies, slightly underbake them. Experiment with different chocolate types or nuts for added flavor.
