Strawberry Velvet Cheesecake Truffle Bites

Delicious small bites of strawberry cake and cream cheese coated in white chocolate, perfect for parties or snacks.

Ingredients

  • 12 fresh Strawberries
  • 1 cup Powdered sugar
  • 1 tablespoon freeze-dried Strawberries or reserved cake crumbs
  • 2 cups Velvet strawberry cake, red
  • 2 cups White chocolate chips or melting wafers (6 oz)
  • Cream cheese

Instructions

  1. Prepare the red velvet strawberry cake according to package instructions or your preferred recipe and let it cool.
  2. Crumble the cooled cake into a large mixing bowl.
  3. In a separate bowl, beat the cream cheese with the powdered sugar until smooth.
  4. Add the freeze-dried strawberries or reserved cake crumbs and mix until well combined.
  5. Gently fold the cake crumbs into the cream cheese mixture until evenly distributed.
  6. Form the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  7. Freeze the truffle bites for about 30 minutes or until firm.
  8. Melt the white chocolate chips in a microwave or double boiler until smooth.
  9. Dip each truffle into the melted chocolate and return them to the baking sheet.
  10. Before the chocolate sets, garnish with extra freeze-dried strawberries or cake crumbs if desired.
  11. Allow the chocolate to harden completely at room temperature or in the fridge.

Notes

Use cold cream cheese for easier shaping and freeze the balls before coating with chocolate for a clean finish.
