- 12 fresh Strawberries
- 1 cup Powdered sugar
- 1 tablespoon freeze-dried Strawberries or reserved cake crumbs
- 2 cups Velvet strawberry cake, red
- 2 cups White chocolate chips or melting wafers (6 oz)
- Cream cheese
Instructions
- Prepare the red velvet strawberry cake according to package instructions or your preferred recipe and let it cool.
- Crumble the cooled cake into a large mixing bowl.
- In a separate bowl, beat the cream cheese with the powdered sugar until smooth.
- Add the freeze-dried strawberries or reserved cake crumbs and mix until well combined.
- Gently fold the cake crumbs into the cream cheese mixture until evenly distributed.
- Form the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Freeze the truffle bites for about 30 minutes or until firm.
- Melt the white chocolate chips in a microwave or double boiler until smooth.
- Dip each truffle into the melted chocolate and return them to the baking sheet.
- Before the chocolate sets, garnish with extra freeze-dried strawberries or cake crumbs if desired.
- Allow the chocolate to harden completely at room temperature or in the fridge.

Notes
Use cold cream cheese for easier shaping and freeze the balls before coating with chocolate for a clean finish.
