- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 cup heavy cream
- 1 cup fresh strawberries, hulled and chopped
- 1/4 cup granulated sugar
- 2 tbsp melted butter
- 1/4 cup graham cracker crumbs
- 1/4 cup white chocolate chips, melted (optional)
- 6–8 small flour tortillas (6-inch)
- Melted white chocolate for dipping tortillas (optional)
- Fresh strawberries, sliced (for garnish)
- Whipped cream (optional)
- Mint leaves (optional)
Instructions
- In a medium bowl, beat the softened cream cheese until smooth and fluffy.
- Add powdered sugar gradually, beating until fully incorporated.
- Mix in vanilla extract and heavy cream until smooth. Set aside.
- In another bowl, mix chopped strawberries, granulated sugar, melted butter, and graham cracker crumbs. Stir in melted white chocolate if using. Set aside.
- Preheat oven to 350°F (175°C). Dip tortillas in melted white chocolate if desired. Bake for 5–7 minutes until crisp and golden.
- Let taco shells cool, then fill with cheesecake mixture using a spoon or piping bag.
- Top with strawberry crunch mixture and garnish with fresh strawberries, whipped cream, and mint leaves if desired.
- Serve immediately and enjoy the delightful texture and flavor contrast.
Notes
Best served fresh. You can prepare the filling and topping ahead of time and assemble just before serving. Feel free to experiment with different fruits, chocolates, and spices for creative variations.
