- 1 cup almond flour
- 1/2 cup vanilla protein powder
- 1/4 cup freeze-dried strawberries, finely crushed
- 2 tbsp honey or maple syrup
- 2 to 3 tbsp almond milk
- 1 tsp vanilla extract
- 1/3 cup cream cheese (or Greek yogurt for a lighter version)
- 1 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- 1/4 cup vanilla yogurt or melted chocolate (optional coating)
Instructions
- In a bowl, mix almond flour, vanilla protein powder, crushed freeze-dried strawberries, honey (or maple syrup), almond milk, and vanilla extract until well combined.
- Form the mixture into small balls and set aside.
- In another bowl, mix cream cheese (or Greek yogurt), honey (or maple syrup), and vanilla extract until smooth.
- Fill each ball with a small amount of the cheesecake filling.
- If desired, coat the balls in vanilla yogurt or melted chocolate.
- Refrigerate for at least 30 minutes before serving.
Notes
Finely crush freeze-dried strawberries for better distribution. If the mixture is too dry, add more almond milk. For variations, consider adding mini chocolate chips or nuts.
