Strawberry Cheesecake Cookies

Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped strawberries
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the cream cheese and butter until smooth.
  3. Add in the granulated sugar, and beat until fluffy.
  4. Mix in the egg and vanilla extract until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the chopped strawberries and white chocolate chips if using.
  7. Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Use room temperature ingredients for a smoother dough and ensure you pat strawberries dry to avoid extra moisture.
