- 4 chicken thighs
- 1 cup apple cider
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups mixed cabbage (green and red)
- 1 cup grated carrots
- 1 apple, diced
- 1/4 cup chopped walnuts
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
Instructions
- In a bowl, mix apple cider, soy sauce, Dijon mustard, olive oil, salt, and pepper. Marinate the chicken thighs in the mixture for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- Place the marinated chicken in a baking dish and bake for 25-30 minutes or until cooked through.
- For the slaw, combine mixed cabbage, grated carrots, diced apple, and chopped walnuts in a large bowl.
- In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, and salt for the dressing.
- Pour the dressing over the slaw and toss to combine.
- Serve the sticky chicken with a side of crisp autumn slaw.
Notes
Marinate longer (2–4 hours) for more flavor. Pat the chicken dry before roasting for better browning.
