- 6 Chicken thighs, bone-in and skin-on
- 1 medium Apple
- 1 cup Carrots
- 2 cloves Garlic
- 2 cups Green cabbage
- 2 tbsp Parsley or chives, fresh
- 1 tbsp Dijon mustard
- 2 tbsp Honey
- 1/4 tsp Celery seeds
- Salt and pepper to taste
- 2 tbsp Apple cider vinegar
- 1 tbsp Cooking oil
- 1 cup Apple cider
Instructions
- In a large skillet, heat the cooking oil over medium heat.
- Season the chicken thighs with salt and pepper, then add them to the skillet. Sear the thighs until golden brown, about 5-7 minutes per side.
- In a separate bowl, combine apple cider, apple cider vinegar, Dijon mustard, honey, garlic, and celery seeds. Pour this mixture over the chicken thighs in the skillet.
- Reduce the heat to low, cover, and let simmer for about 20 minutes, or until the chicken is cooked through and the sauce is thickened. Stir occasionally to ensure even cooking.
- While the chicken is cooking, prepare the slaw. In a large bowl, combine sliced cabbage, grated carrots, chopped apple, and fresh herbs. Toss with a dressing made from apple cider vinegar, olive oil, salt, and pepper.
- Serve the sticky apple cider chicken hot, topped with the autumn slaw on the side.
Notes
Pat the chicken dry before searing for a better crust. Use a sweet-tart apple for the slaw and taste the sauce while simmering to adjust flavors.
