- 1 bag frozen chopped spinach (10 oz), thawed and excess water squeezed out
- 1 block cream cheese (8 oz), softened
- 1/2 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Pinch of red pepper flakes (optional, for heat)
- 1 sheet puff pastry, thawed but still cold
- 1 egg, for brushing
Instructions
- In a bowl, combine cream cheese, Parmesan, mayonnaise, garlic powder, onion powder, and black pepper. Add the squeezed spinach and mix until even.
- Flour your counter and roll out the puff pastry. Spread the spinach mixture over the pastry, leaving one long side empty to seal. Roll tightly like a jelly roll.
- Wrap the log in plastic wrap and chill in the fridge for 30 minutes. Meanwhile, preheat the oven to 400°F.
- Slice the log into half-inch rounds and place on a baking sheet lined with parchment paper. Beat the egg with a splash of water and brush on top of each pinwheel. Bake for 15-20 minutes, until puffed and golden brown.
Notes
Squeeze out as much water from the spinach as possible to prevent soggy filling. Experiment with spices and herbs for added flavor.
