- 1 lb Ground beef
- 1/4 cup Cilantro, fresh
- 1 clove Garlic, minced
- 1 Jalapeno pepper, diced
- 1 Lime, fresh wedges
- 1 can Mexican-style tomatoes with green chilies
- 1/2 cup Onion, chopped
- 1 Egg
- 1 tsp Chili powder
- 1/2 tsp Paprika, smoked
- Salt and pepper to taste
- 1 tbsp Olive oil
- 1 tsp Cumin, ground
- 1/2 cup Tortilla chips, crushed
- 1 cup Cheddar cheese, shredded
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft.
- Add ground beef and cook until browned.
- Stir in the jalapeno, cilantro, chili powder, paprika, cumin, and season with salt and pepper.
- Mix in the can of Mexican-style tomatoes and let simmer for a few minutes.
- Remove from heat and mix in crushed tortilla chips and cheddar cheese.
- Shape the mixture into balls and place them on a baking sheet.
- Bake for 20-25 minutes until golden brown.
- Serve with fresh lime wedges and your favorite dipping sauce.
Notes
For milder flavors, remove jalapeño seeds. These can be served with salsa, sour cream, or guacamole.
