Ingredients

  • 1 lb Ground beef
  • 1/4 cup Cilantro, fresh
  • 1 clove Garlic, minced
  • 1 Jalapeno pepper, diced
  • 1 Lime, fresh wedges
  • 1 can Mexican-style tomatoes with green chilies
  • 1/2 cup Onion, chopped
  • 1 Egg
  • 1 tsp Chili powder
  • 1/2 tsp Paprika, smoked
  • Salt and pepper to taste
  • 1 tbsp Olive oil
  • 1 tsp Cumin, ground
  • 1/2 cup Tortilla chips, crushed
  • 1 cup Cheddar cheese, shredded

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until soft.
  3. Add ground beef and cook until browned.
  4. Stir in the jalapeno, cilantro, chili powder, paprika, cumin, and season with salt and pepper.
  5. Mix in the can of Mexican-style tomatoes and let simmer for a few minutes.
  6. Remove from heat and mix in crushed tortilla chips and cheddar cheese.
  7. Shape the mixture into balls and place them on a baking sheet.
  8. Bake for 20-25 minutes until golden brown.
  9. Serve with fresh lime wedges and your favorite dipping sauce.

Notes

For milder flavors, remove jalapeño seeds. These can be served with salsa, sour cream, or guacamole.
