- 10 whole eggs
- 1 cup chorizo, sliced
- 1 large onion, diced
- 1 large poblano pepper, diced
- 2 cups hash browns (frozen or fresh)
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 can diced green chiles
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 cup cottage cheese
- 1/2 cup milk
- 1 cup shredded cheese (Cheddar or Monterey Jack)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the chorizo and diced onions, poblano pepper until browned.
- In a large bowl, mix together the eggs, milk, cottage cheese, and shredded cheese.
- Add the cooked chorizo mixture to the egg mixture and stir to combine.
- Layer the hash browns in a greased baking dish, then pour the egg mixture over the top.
- Bake for 45-50 minutes until the eggs are set and the top is golden brown.
Notes
For added flavor, consider using different vegetables or cheeses. This dish can also be made ahead and stored in the fridge overnight.
