  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. Stir in the pistachio pudding mix until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Fold in the white chocolate chips and chopped pistachios.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
