- 4 chicken breasts
- 1 cup long-grain rice
- 1 onion, diced

Instructions
- Add the diced onion, garlic, and olive oil to a slow cooker.
- Place the chicken breasts on top and season with salt, pepper, thyme, and rosemary.
- Pour in the chicken broth and lemon juice.
- Add the rice, stirring gently to combine.
- Cover and cook on low for 4-6 hours or until the chicken is fully cooked and the rice is tender.
- Once done, fluff the rice with a fork and serve garnished with fresh parsley.
Notes
For quicker cooking, cut the chicken breasts into smaller pieces. Adjust lemon juice to taste and consider adding more vegetables for variety.
