Ingredients

  • 4 chicken breasts
  • 1 cup long-grain rice
  • 1 onion, diced
  • 3 cups chicken broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Add the diced onion, garlic, and olive oil to a slow cooker.
  2. Place the chicken breasts on top and season with salt, pepper, thyme, and rosemary.
  3. Pour in the chicken broth and lemon juice.
  4. Add the rice, stirring gently to combine.
  5. Cover and cook on low for 4-6 hours or until the chicken is fully cooked and the rice is tender.
  6. Once done, fluff the rice with a fork and serve garnished with fresh parsley.

Notes

For quicker cooking, cut the chicken breasts into smaller pieces. Adjust lemon juice to taste and consider adding more vegetables for variety.
