- 2 1/2 lbs Beef chuck, roast
- 2 lbs Baby yukon gold potatoes
- 1 cup Carrots
- 5 cloves Garlic
- 1 tsp Italian herbs, dried
- 1 medium Onion
- 1/4 cup fresh Parsley
- 1/2 cup low sodium Beef broth
- 1/2 tsp Red pepper flakes
- Salt and black pepper to taste
- 2 tbsp Olive oil
- 6 tbsp unsalted Butter
Instructions
- Add the beef chuck, potatoes, carrots, and onion to the slow cooker.
- In a separate bowl, mix together the garlic, Italian herbs, beef broth, red pepper flakes, salt, and pepper. Pour this mixture over the beef and vegetables.
- Add the parsley on top.
- Drizzle olive oil and place the butter on top of the ingredients.
- Cover and cook on low for 8 hours or until the beef is tender and the potatoes are cooked through.
- Serve warm and enjoy your comforting meal!
Notes
For extra flavor, brown the beef before adding it to the slow cooker, and use room temperature butter for even melting.
