Slow Cooker Garlic Butter Beef with Potatoes

Ingredients

  • 2 1/2 lbs Beef chuck, roast
  • 2 lbs Baby yukon gold potatoes
  • 1 cup Carrots
  • 5 cloves Garlic
  • 1 tsp Italian herbs, dried
  • 1 medium Onion
  • 1/4 cup fresh Parsley
  • 1/2 cup low sodium Beef broth
  • 1/2 tsp Red pepper flakes
  • Salt and black pepper to taste
  • 2 tbsp Olive oil
  • 6 tbsp unsalted Butter

Instructions

  1. Add the beef chuck, potatoes, carrots, and onion to the slow cooker.
  2. In a separate bowl, mix together the garlic, Italian herbs, beef broth, red pepper flakes, salt, and pepper. Pour this mixture over the beef and vegetables.
  3. Add the parsley on top.
  4. Drizzle olive oil and place the butter on top of the ingredients.
  5. Cover and cook on low for 8 hours or until the beef is tender and the potatoes are cooked through.
  6. Serve warm and enjoy your comforting meal!

Notes

For extra flavor, brown the beef before adding it to the slow cooker, and use room temperature butter for even melting.
