- 2 lbs boneless, skinless chicken thighs, cut into 1.5-inch pieces
- 3 medium carrots, peeled and chunked (about 1 cup)
- 3 celery stalks, chopped (about 1 cup)
- 2 medium yellow onions, diced
- 3 cloves garlic, minced
- 2 medium russet potatoes, peeled and cubed (about 2 cups)
- 1 cup frozen peas
- 4 cups low-sodium chicken broth
- 1 cup dry white wine (or additional chicken broth)
- 2 bay leaves
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 2 teaspoons sweet paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons all-purpose flour (or cornstarch for gluten-free option)
- 2 tablespoons olive oil
- 1 cup sliced mushrooms (optional)
- 1 parsnip, peeled and chopped (optional)
- 1/2 cup heavy cream (optional, added during the last 30 minutes)
- Fresh parsley for garnish
- Crusty bread for serving
Instructions
- Season the chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Brown the chicken pieces for 2-3 minutes per side until golden. Transfer to the slow cooker.
- Add onions to the same skillet and sauté for 2-3 minutes until translucent. Add garlic and cook for 30 seconds. Sprinkle flour over the mixture and stir for 1 minute.
- Add the sautéed onion mixture to the slow cooker along with carrots, celery, potatoes, herbs, and spices. Pour in the chicken broth and wine. Stir gently to combine.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
- During the last 30 minutes, add frozen peas (and cream if using).
- Remove bay leaves, taste, and adjust seasonings. Serve hot, garnished with fresh parsley, and accompanied by crusty bread.
Notes
For a thicker stew, mix cornstarch with cold water and stir in during the last 30 minutes. To make ahead, prepare ingredients the night before and refrigerate.
