Slow-Braised Beef Roast with Cranberry Balsamic Glaze

Ingredients

  • 3 lbs Beef chuck roast
  • 4 Carrots
  • 1 1/2 cups Cranberries, whole fresh or frozen
  • 4 Garlic cloves
  • 4 sprigs Thyme, fresh
  • 1 Yellow onion, large
  • 2 cups Beef broth
  • 1/2 cup Balsamic vinegar
  • 1 tsp Black pepper
  • 3 tbsp Brown sugar
  • 1 1/2 tsp Salt
  • 2 tbsp Olive oil

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef roast with salt and black pepper on all sides.
  3. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Sear the beef roast until browned on all sides, about 4-5 minutes per side. Remove the roast and set aside.
  4. In the same pot, add the chopped onion and carrots; sauté for about 5 minutes or until softened. Add garlic and thyme, cooking for another minute.
  5. Stir in the cranberries, beef broth, balsamic vinegar, and brown sugar, stirring to combine.
  6. Return the beef roast to the pot, cover, and transfer to the preheated oven.
  7. Slow-braise in the oven for about 180-240 minutes until the beef is tender and can be easily shredded with a fork.
  8. Remove the roast and let it rest for a few minutes before slicing.
  9. Serve with the glazed sauce drizzled over the beef.

Notes

Use a meat thermometer to ensure your beef reaches an internal temperature of 190°F (88°C) for perfect tenderness. Feel free to add other vegetables like potatoes or parsnips for added flavor.
