- 3 lbs Beef chuck roast
- 4 Carrots
- 1 1/2 cups Cranberries, whole fresh or frozen
- 4 Garlic cloves
- 4 sprigs Thyme, fresh
- 1 Yellow onion, large
- 2 cups Beef broth
- 1/2 cup Balsamic vinegar
- 1 tsp Black pepper
- 3 tbsp Brown sugar
- 1 1/2 tsp Salt
- 2 tbsp Olive oil
Instructions
- Preheat your oven to 300°F (150°C).
- Season the beef roast with salt and black pepper on all sides.
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Sear the beef roast until browned on all sides, about 4-5 minutes per side. Remove the roast and set aside.
- In the same pot, add the chopped onion and carrots; sauté for about 5 minutes or until softened. Add garlic and thyme, cooking for another minute.
- Stir in the cranberries, beef broth, balsamic vinegar, and brown sugar, stirring to combine.
- Return the beef roast to the pot, cover, and transfer to the preheated oven.
- Slow-braise in the oven for about 180-240 minutes until the beef is tender and can be easily shredded with a fork.
- Remove the roast and let it rest for a few minutes before slicing.
- Serve with the glazed sauce drizzled over the beef.
Notes
Use a meat thermometer to ensure your beef reaches an internal temperature of 190°F (88°C) for perfect tenderness. Feel free to add other vegetables like potatoes or parsnips for added flavor.
