Salted Caramel Cheesecake Cookies

Delicious cookies with a creamy cheesecake center, topped with caramel and sea salt.

Ingredients

  • 2 large Eggs
  • 1/2 cup Caramel sauce
  • 2 1/2 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 cup Brown sugar
  • 1 cup Granulated sugar
  • 1 pinch Salt
  • 1/2 tsp Sea salt, flaky
  • 1 1/2 tsp Vanilla extract
  • 1 cup Unsalted butter
  • 8 oz Cream cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the unsalted butter, brown sugar, and granulated sugar until fluffy.
  3. Add in the eggs and vanilla extract, mixing until fully incorporated.
  4. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Blend the cream cheese with a bit of sugar and set aside.
  7. Drop spoonfuls of cookie dough onto a baking sheet, indenting the center of each.
  8. Fill the indent with cheesecake filling and drizzle with caramel sauce.
  9. Sprinkle flaky sea salt on top before baking.
  10. Bake for 10-12 minutes until edges are lightly golden.
  11. Allow to cool before serving.

Notes

Store cookies in an airtight container for up to a week or freeze for three months.
