Ruth’s Chris Stuffed Chicken Copycat

Ingredients

  • 4 Chicken breasts, boneless skinless
  • 1 tsp Garlic powder
  • 2 cups Spinach, fresh
  • 1 cup Chicken broth, low-sodium
  • 2 tbsp Lemon juice, fresh
  • 1 tsp Italian seasoning
  • 2 tbsp Olive oil
  • 8 oz Cream cheese
  • 1 cup Mozzarella cheese
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat; add spinach and cook until wilted.
  3. In a bowl, mix together cream cheese, garlic powder, Italian seasoning, lemon juice, and cooked spinach.
  4. Cut a pocket in each chicken breast and stuff with the spinach and cheese mixture.
  5. Place the stuffed chicken in a baking dish and pour chicken broth around it.
  6. Top each chicken breast with mozzarella and Parmesan cheese.
  7. Bake for 25-30 minutes, or until chicken is cooked through.
  8. Serve warm.

Notes

For added flavor, serve with steamed vegetables, rice, or mashed potatoes. Spoon some broth over the chicken before serving.
