Royal Smothered Pork Chops with Potatoes in Gravy

Ingredients

  • 6 pork chops (bone-in or boneless, about 1 inch thick)
  • 4 medium potatoes, peeled and cut into chunks
  • 1 green bell pepper, diced (optional)
  • 1 small onion, chopped
  • 3 tablespoons olive oil or butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 teaspoon dried parsley (for garnish)
  • 2 cups chicken broth
  • 1 can cream of mushroom or cream of chicken soup (10.5 oz)
  • 2 tablespoons flour (optional)
  • 1 tablespoon Worcestershire sauce (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season the pork chops with garlic powder, onion powder, paprika, salt, and pepper.
  3. Sear the pork chops in a skillet with oil over medium-high heat until browned on both sides. Remove and set aside.
  4. In the same skillet, add the onions and green bell pepper (if using) and sauté until softened.
  5. Add the potatoes and stir to combine.
  6. Pour in the chicken broth and cream of mushroom or cream of chicken soup. Stir well, and optionally mix in flour to thicken.
  7. Place the pork chops back into the skillet, cover, and transfer to the oven.
  8. Bake for 25-30 minutes, until the pork is cooked through and the potatoes are tender.
  9. Serve garnished with dried parsley.

Notes

For extra flavor, marinate the pork chops in the spices for a few hours before cooking. Use a meat thermometer to ensure the pork reaches an internal temperature of 145°F (63°C).
