- 1 rotisserie chicken, shredded
- 1 package stuffing mix
- 2 cups chicken broth
- 1 can cream of chicken soup
- 1 cup mixed vegetables (peas, carrots, corn)
- 1/2 cup shredded cheese (optional)

- 1 tablespoon olive oil or butter
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded rotisserie chicken, stuffing mix, chicken broth, cream of chicken soup, and mixed vegetables. Season with salt and pepper.
- Grease a casserole dish with olive oil or butter.
- Pour the chicken mixture into the prepared casserole dish and spread evenly.
- If using, sprinkle shredded cheese on top.
- Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, until heated through and golden on top.
- Let it cool slightly before serving.
Notes
For extra flavor, try adding herbs like thyme or rosemary to the chicken mixture. You can also use any cooked chicken if you don’t have rotisserie chicken on hand. For a crunchier topping, add crushed crackers or breadcrumbs before baking.
