- 2 large sweet potatoes

Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into rounds.
- Toss the rounds with olive oil, salt, and pepper.
- Arrange them on a baking sheet in a single layer.
- Roast in the oven for about 25-30 minutes, flipping halfway through, until they are tender and slightly caramelized.
- Once done, drizzle with honey and sprinkle crumbled feta cheese on top.
- Garnish with fresh herbs if desired and serve warm.
Notes
Cut sweet potatoes into evenly sized rounds for even cooking. Adjust honey and feta amounts to taste.
