Roasted Sweet Potato Rounds with Honey & Feta

Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons honey
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds.
  3. Toss the rounds with olive oil, salt, and pepper.
  4. Arrange them on a baking sheet in a single layer.
  5. Roast in the oven for about 25-30 minutes, flipping halfway through, until they are tender and slightly caramelized.
  6. Once done, drizzle with honey and sprinkle crumbled feta cheese on top.
  7. Garnish with fresh herbs if desired and serve warm.

Notes

Cut sweet potatoes into evenly sized rounds for even cooking. Adjust honey and feta amounts to taste.
