- 2 large Sweet potatoes
- 1/3 cup Feta cheese
- 2 tbsp Honey
- 1/4 tsp Black pepper, ground
- 1/4 tsp Cinnamon, ground
- 1/2 tsp Salt
- 2 tbsp Olive oil
- 1 tbsp fresh Parsley
Instructions
- Preheat the oven to 425°F (220°C).
- Peel and slice the sweet potatoes into rounds about 1/2 inch thick.
- In a large bowl, combine olive oil, salt, black pepper, and cinnamon.
- Toss the sweet potato rounds in the mixture until evenly coated.
- Spread the rounds in a single layer on a baking sheet.
- Roast in the oven for about 25-30 minutes or until golden and tender, flipping halfway through.
- Once roasted, remove from the oven and top with crumbled feta cheese and drizzle with honey.
- Garnish with fresh parsley before serving.
Notes
For best texture, add feta and honey fresh when serving. If already topped, store in a shallow container and use within two days.
