- 2 cups all-purpose flour
- 8 tbsp unsalted butter, room temperature
- 2 tsp vanilla extract
- 1 cup granulated sugar
- 1 large egg
- 1 cup buttermilk
- 1 tbsp cocoa powder
- 1 tsp baking soda
- 1 tsp white vinegar
- Red food coloring
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In one bowl, whisk together the flour, cocoa powder, baking soda, and a pinch of salt. Set aside.
- In another bowl, cream the butter and sugar together until light and fluffy.
- Beat in the egg, vanilla extract, and a generous splash of red food coloring until everything is beautifully combined.
- Gradually alternate adding the dry flour mixture and the buttermilk to the butter mixture, mixing until just combined. Don’t overmix!
- Use a tablespoon to drop dollops of the batter onto the lined baking sheet, spacing them a couple of inches apart.
- Bake them for about 10-12 minutes or until they spring back when lightly touched.
- Let them cool completely on a wire rack.
- For that luscious filling, beat together some butter, powdered sugar, and a little vanilla extract until it’s smooth and creamy.
- Finally, sandwich that delicious filling between two of your red velvet cookies. Take a bite and enjoy the magic!
