Raspberry Swirl Christmas Roll

A delightful dessert that adds a festive touch to holiday gatherings with a light, fluffy cake swirled with sweet raspberry jam.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 375°F (190°C). Grease and line a jelly roll pan with parchment paper.
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until thick and fluffy. Stir in vanilla.
  4. Gradually fold in the flour mixture until combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 12-15 minutes until lightly golden.
  7. Once baked, remove from the oven and invert onto a towel dusted with powdered sugar.
  8. Spread raspberry jam evenly over the cake.
  9. Carefully roll the cake with the towel from the short end, allowing it to cool in the shape of a roll.
  10. Once cooled, unroll, fill, and re-roll without the towel.
  11. Dust with powdered sugar before serving.

Notes

Keep eggs at room temperature for better mixing. Use good quality jam for best flavor.
