- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup raspberry jam
- Powdered sugar for dusting
Instructions
- Preheat the oven to 375°F (190°C). Grease and line a jelly roll pan with parchment paper.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, beat eggs and sugar until thick and fluffy. Stir in vanilla.
- Gradually fold in the flour mixture until combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes until lightly golden.
- Once baked, remove from the oven and invert onto a towel dusted with powdered sugar.
- Spread raspberry jam evenly over the cake.
- Carefully roll the cake with the towel from the short end, allowing it to cool in the shape of a roll.
- Once cooled, unroll, fill, and re-roll without the towel.
- Dust with powdered sugar before serving.
Notes
Keep eggs at room temperature for better mixing. Use good quality jam for best flavor.
