Pumpkin Pecan Cobbler

Ingredients

  • 1 can Pumpkin puree
  • 1 large Egg
  • 1 cup All-purpose flour
  • 1 tsp Baking powder
  • 1 1/2 cup Brown sugar, packed
  • 1 tsp Cinnamon, ground
  • 1/4 tsp Cloves, ground
  • 1 1/4 cup Granulated sugar
  • 1/2 tsp Nutmeg, ground
  • 1/2 tsp Salt
  • 1 tsp Vanilla extract
  • 1 cup Pecan, chopped
  • 1/2 cup Unsalted butter, melted
  • 1/2 cup Whole milk
  • 1 1/2 cups Water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the pumpkin puree, egg, brown sugar, granulated sugar, vanilla extract, and melted butter.
  3. In a separate bowl, mix the all-purpose flour, baking powder, cinnamon, cloves, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the pecans.
  6. Pour the batter into a greased baking dish.
  7. In a saucepan, bring the water to a boil and then carefully pour it over the batter in the baking dish.
  8. Bake for 60 minutes or until the top is set and golden.
  9. Let it cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
