Pineapple Upside Down Sugar Cookies

These Pineapple Upside Down Sugar Cookies are sweet, bright, and easy to make, combining the flavors of a classic upside down cake in a small cookie form.

Ingredients

  • 6 Pineapple rings, canned
  • 1 Egg
  • 1 1/2 cups All-purpose flour
  • 1 1/2 tsp Baking powder
  • 1/2 cup Brown sugar
  • 3/4 cup Granulated sugar
  • 1/4 tsp Salt
  • 1/2 cup Butter, unsalted
  • 12 Maraschino cherries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Grease a baking pan and place the pineapple rings in the bottom. Place a maraschino cherry in the center of each pineapple ring.
  7. Drop spoonfuls of the cookie dough over the pineapple rings.
  8. Bake for 12-15 minutes or until the edges are golden.
  9. Allow to cool for a few minutes before inverting onto a serving platter.
  10. Serve warm or at room temperature.

Notes

Store cookies in an airtight container at room temperature for up to 3 days. For longer storage, freeze the cookies in a sealed bag for up to one month.
