Peanut Butter Brownie Cookies

Ingredients

  • 1 cup creamy peanut butter
  • 0.67 cup all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the peanut butter, sugar, egg, and vanilla extract. Blend until smooth.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the peanut butter mixture and mix until just combined. Fold in chocolate chips if desired.
  5. Drop tablespoons of dough onto a baking sheet lined with parchment paper, leaving space in between.
  6. Bake for 10-12 minutes until edges are set and tops are glossy.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 3 days. For longer storage, freeze the baked cookies for up to 2 months.
