No-Bake Chocolate Coconut Oatmeal Treats

These no-bake chocolate coconut oatmeal treats are easy and quick to make, chewy, a little crunchy, and full of chocolate and coconut flavor.

Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup dark or semi-sweet chocolate chips
  • 1/2 cup nut butter (peanut or almond)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine the rolled oats, shredded coconut, and chocolate chips. Stir well.
  2. In a small saucepan over low heat, combine nut butter, honey (or maple syrup), vanilla extract, and salt. Stir until smooth.
  3. Pour the nut butter mixture over the dry ingredients and mix until thoroughly combined.
  4. Press the mixture into a lined baking dish evenly and refrigerate for at least 30 minutes.
  5. Once set, cut into bars or squares and enjoy.

Notes

Press the mixture firmly into the dish for best results. Adjust sweetness with additional honey or maple syrup if desired.
