- 1 cup rolled oats
- 1 cup unsweetened shredded coconut
- 1/2 cup dark or semi-sweet chocolate chips
- 1/2 cup nut butter (peanut or almond)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a mixing bowl, combine the rolled oats, shredded coconut, and chocolate chips. Stir well.
- In a small saucepan over low heat, combine nut butter, honey (or maple syrup), vanilla extract, and salt. Stir until smooth.
- Pour the nut butter mixture over the dry ingredients and mix until thoroughly combined.
- Press the mixture into a lined baking dish evenly and refrigerate for at least 30 minutes.
- Once set, cut into bars or squares and enjoy.
Notes
Press the mixture firmly into the dish for best results. Adjust sweetness with additional honey or maple syrup if desired.
