Mascarpone Mudslide Pie

A creamy chocolate pie with a coffee-kissed filling, perfect for special occasions or a sweet treat.

Ingredients

  • 24 Oreo or chocolate sandwich cookies
  • 6 tbsp unsalted butter, melted
  • 8 oz high-quality dark chocolate, finely chopped
  • 16 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/4 cup coffee liqueur (like Kahlúa)
  • 1 tsp vanilla extract
  • Chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Crush the Oreo cookies into fine crumbs and mix them with the melted butter. Press the mixture firmly into the bottom of a pie pan to create a crust. Bake for 10 minutes, then let it cool.
  2. In a heatproof bowl, melt the finely chopped dark chocolate over a double boiler or in the microwave until smooth. Allow it to cool slightly.
  3. In a large bowl, combine the mascarpone cheese, powdered sugar, coffee liqueur, and vanilla extract. Beat the mixture until silky smooth. Gently fold in the melted chocolate.
  4. In another bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the chocolate mascarpone mixture until smooth.
  5. Pour the filling into the cooled chocolate crust and smooth the top. Refrigerate for at least 4 hours until set.
  6. Before serving, sprinkle chocolate shavings on top.

Notes

Use room temperature mascarpone for smooth mixing. Allow melted chocolate to cool slightly before incorporating it.
