Ingredients
Scale
- 24 Oreo or chocolate sandwich cookies
- 6 tbsp unsalted butter, melted
- 8 oz high-quality dark chocolate, finely chopped
- 16 oz mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/4 cup coffee liqueur (like Kahlúa)
- 1 tsp vanilla extract
- Chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C). Crush the Oreo cookies into fine crumbs and mix them with the melted butter. Press the mixture firmly into the bottom of a pie pan to create a crust. Bake for 10 minutes, then let it cool.
- In a heatproof bowl, melt the finely chopped dark chocolate over a double boiler or in the microwave until smooth. Allow it to cool slightly.
- In a large bowl, combine the mascarpone cheese, powdered sugar, coffee liqueur, and vanilla extract. Beat the mixture until silky smooth. Gently fold in the melted chocolate.
- In another bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the chocolate mascarpone mixture until smooth.
- Pour the filling into the cooled chocolate crust and smooth the top. Refrigerate for at least 4 hours until set.
- Before serving, sprinkle chocolate shavings on top.
Notes
Use room temperature mascarpone for smooth mixing. Allow melted chocolate to cool slightly before incorporating it.
