- 2 cups Rotisserie chicken
- 3 cups Baby spinach, fresh
- 4 tsp Basil, fresh
- 4 cloves Garlic
- 1 tsp Garlic powder
- 1/2 cup Sun-dried tomatoes
- 1 1/2 cups Yellow onion
- 32 oz Chicken broth
- 3 tbsp Tomato paste
- 8 oz Shell pasta, medium
- 1 1/2 tsp Italian seasoning, dried
- 2 tsp Kosher salt
- 1/4 tsp Red pepper
- 8 oz Cream cheese
- 1 cup Heavy whipping cream
- 1 1/2 oz Parmesan cheese
- 1 tbsp Oil from sun-dried tomato jar
Instructions
- In a large pot, heat the olive oil from the sun-dried tomato jar over medium heat. Add the chopped yellow onion and garlic; sauté until translucent.
- Stir in the sun-dried tomatoes, basil, garlic powder, Italian seasoning, and red pepper. Cook for 2 minutes.
- Add the chicken broth and bring to a simmer.
- Incorporate the rotisserie chicken, shell pasta, and heavy whipping cream. Cook until the pasta is tender, about 10 minutes.
- Stir in the baby spinach, cream cheese, and Parmesan cheese until melted and combined.
- Season with kosher salt to taste. Serve warm and enjoy your cozy soup!

Serve warm, garnished with extra Parmesan cheese and fresh basil if desired. Pairs well with crusty bread or a side salad.
