- 4 Chicken breasts, boneless skinless
- 1 tbsp Lemon, zest
- 4 Lemon slices
- 1/4 cup Parsley, fresh
- 2 Eggs, large
- 1/2 cup Chicken broth
- 1/4 cup Lemon juice, fresh
- 1 cup All-purpose flour
- Salt and pepper to taste
- 1/4 cup Olive oil
- 1/3 cup Romano cheese, grated
- 1/4 cup White wine, dry
Instructions
- Preheat the oven to 400°F (200°C).
- In a shallow bowl, whisk together the eggs, lemon juice, and chicken broth.
- In another bowl, combine the flour, salt, pepper, and Romano cheese.
- Dip each chicken breast into the egg mixture, then coat with the flour mixture.
- Heat olive oil in a skillet over medium heat.
- Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
- Place the chicken in a baking dish, top with lemon slices and parsley, and pour the white wine over them.
- Bake in the preheated oven for 20 minutes or until the chicken is cooked through.
- Serve with pasta or salad.
Notes
Garnish with extra parsley or lemon slices for added freshness. Can store in the refrigerator for up to 3 days or freeze for up to 2 months.
