Lemon Chicken Romano

Ingredients

  • 4 Chicken breasts, boneless skinless
  • 1 tbsp Lemon, zest
  • 4 Lemon slices
  • 1/4 cup Parsley, fresh
  • 2 Eggs, large
  • 1/2 cup Chicken broth
  • 1/4 cup Lemon juice, fresh
  • 1 cup All-purpose flour
  • Salt and pepper to taste
  • 1/4 cup Olive oil
  • 1/3 cup Romano cheese, grated
  • 1/4 cup White wine, dry

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow bowl, whisk together the eggs, lemon juice, and chicken broth.
  3. In another bowl, combine the flour, salt, pepper, and Romano cheese.
  4. Dip each chicken breast into the egg mixture, then coat with the flour mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
  7. Place the chicken in a baking dish, top with lemon slices and parsley, and pour the white wine over them.
  8. Bake in the preheated oven for 20 minutes or until the chicken is cooked through.
  9. Serve with pasta or salad.

Notes

Garnish with extra parsley or lemon slices for added freshness. Can store in the refrigerator for up to 3 days or freeze for up to 2 months.
