- 3/4 cup Blueberries, fresh or frozen
- Zest of 1 large Lemon (about 1 tbsp)
- 1 large Egg
- 1 cup Rolled oats
- 1/4 cup Honey or maple syrup
- 1/2 tsp Baking powder
- 1 Pinch Salt
- 1 tsp Vanilla extract
- 1 cup Cottage cheese
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the cottage cheese, egg, lemon zest, honey (or maple syrup), and vanilla extract. Mix until smooth.
- In another bowl, combine the rolled oats, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the blueberries.
- Scoop the mixture onto the prepared baking sheet, forming small bites.
- Bake for 15-20 minutes or until the bites are golden and set.
- Allow to cool before serving.
Notes
Store bites in an airtight container in the refrigerator for up to one week. You can freeze them for longer storage, just separate with parchment paper.
