- 1 cup Blueberries, fresh
- 1 tablespoon Lemon juice
- 2 tablespoons Honey
- 1/2 cup Almond flour
- 1 pinch Salt
- 1 teaspoon Vanilla extract
- 1 cup Cottage cheese, low-fat
Instructions
- In a mixing bowl, combine cottage cheese, honey, lemon juice, and vanilla extract.
- Add almond flour, salt, and gently fold in the fresh blueberries.
- Mix until well combined.
- Scoop out tablespoon-sized portions and roll them into balls.
- Place the bites on a plate and refrigerate for at least 20 minutes to firm up.
- Enjoy as a snack or post-workout treat!
