Japanese Fluffy Pancakes

Ingredients

  • 1 cup cake flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 cup whole milk
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract
  • 2 large egg yolks
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. In a large bowl, mix the flour, sugar, and baking powder together.
  2. In another bowl, whisk the milk, water, vanilla extract, and egg yolks.
  3. Combine the wet ingredients with the dry ingredients and mix until just combined.
  4. In a separate bowl, beat the egg whites with cream of tartar until frothy, then gradually add sugar and beat to stiff peaks.
  5. Gently fold the egg whites into the batter to maintain its fluffiness.
  6. Heat a non-stick pan on medium-low and pour the batter to form thick pancakes.
  7. Cover the pan to trap steam and cook for 4-5 minutes until bubbles appear.
  8. Flip the pancakes and cook for another 4-5 minutes until golden and fluffy.

Notes

Serve with fresh fruit, whipped cream, and syrup for a delicious twist.
