Instructions
- In a large bowl, mix the flour, sugar, and baking powder together.
- In another bowl, whisk the milk, water, vanilla extract, and egg yolks.
- Combine the wet ingredients with the dry ingredients and mix until just combined.
- In a separate bowl, beat the egg whites with cream of tartar until frothy, then gradually add sugar and beat to stiff peaks.
- Gently fold the egg whites into the batter to maintain its fluffiness.
- Heat a non-stick pan on medium-low and pour the batter to form thick pancakes.
- Cover the pan to trap steam and cook for 4-5 minutes until bubbles appear.
- Flip the pancakes and cook for another 4-5 minutes until golden and fluffy.
Notes
Serve with fresh fruit, whipped cream, and syrup for a delicious twist.
