Italian Antipasto Skewers with Marinated Tortellini and Mozzarella

Ingredients

  • 12 slices Salami
  • 1/3 cup Fresh Basil leaves
  • 1 cup Cherry tomatoes
  • 1/2 cup Green olives
  • 1/2 cup Italian dressing or herb marinade
  • 1/2 cup Kalamata olives
  • 9 oz Cheese tortellini, cooked and cooled
  • 1 cup Mozzarella

Instructions

  1. In a bowl, combine the cooked tortellini with the Italian dressing or herb marinade and let marinate for at least 15 minutes.
  2. Prepare skewers by threading a slice of salami, a basil leaf, a cherry tomato, a green olive, a marinated tortellini, a Kalamata olive, and a mozzarella ball onto each skewer.
  3. Repeat the process until all ingredients are used.
  4. Arrange the skewers on a platter and serve immediately or refrigerate until ready to serve.

Notes

For a vegetarian version, remove the salami and add more vegetables.
