Irresistibly Indulgent Carrot Cake Cream Cheese Bars

Ingredients

  • 1 cup Carrots, grated
  • 1 large Egg
  • 1 large Egg yolk
  • 1 cup All-purpose flour
  • 1/2 tsp Baking powder
  • 1 cup light Brown sugar
  • 1 tsp ground Cinnamon
  • 1/2 cup Granulated sugar
  • 1/2 tsp Kosher salt
  • 1/2 tsp ground Nutmeg
  • 1 tsp Vanilla extract
  • 1/2 cup unsalted Butter, melted
  • 4 oz Cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix the grated carrots, eggs, and vanilla extract.
  3. In another bowl, combine the flour, baking powder, sugars, cinnamon, nutmeg, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until well combined.
  5. Stir in the melted butter and mix until smooth.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. For the cream cheese layer, beat the softened cream cheese until smooth, then spread over the cooled bars before cutting into squares.
  9. Allow to chill slightly before serving.

Notes

For best results, use fresh ingredients and check baking powder freshness. Chill before cutting for neater squares.
