  • 1 lb Shrimp
  • 1 Avocado
  • 3 Bell peppers (cut into thin 1/4 inch strips)
  • 1/4 cup Cilantro
  • 4 Garlic cloves (minced)
  • 1 Jalapeno ranch
  • 1 Lime
  • 1/2 Onion (sliced)
  • 2 1/2 tbsp Lime juice
  • 1 tbsp Cajun spice
  • 1/4 tsp Chili powder
  • 1/2 tsp Salt
  • 1/3 cup Olive oil
  • 8 Flour tortillas

Instructions

  1. Heat olive oil in a large skillet over medium-high heat until it ripples.
  2. Add sliced onion and bell peppers; cook for 5–7 minutes until softened.
  3. Push vegetables to the side, add shrimp, garlic, Cajun spice, chili powder, and salt; stir frequently and cook for 3–5 minutes until shrimp are pink.
  4. Squeeze lime juice and add chopped cilantro; stir to combine.
  5. Warm flour tortillas in a skillet for 20–30 seconds per side.
  6. Spoon shrimp and vegetables into warm tortillas and top with sliced avocado and jalapeño ranch.
