- 10 Pineapple rings, canned
- 1 Egg
- 2 1/2 cups All-purpose flour
- 1/2 tsp Baking soda
- 1 cup Granulated sugar
- 1/4 tsp Salt
- 1 tsp Vanilla extract
- 1 cup Butter, unsalted
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking sheet.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture, stirring until just combined.
- Drop teaspoon-sized amounts of dough onto the prepared baking sheet, leaving space between each.
- Press a pineapple ring into the center of each dough ball.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, experiment with toppings like coconut or chopped nuts, and feel free to substitute peaches or cherries for the pineapple.
