Pineapple Upside Down Sugar Cookies

Ingredients

  • 10 Pineapple rings, canned
  • 1 Egg
  • 2 1/2 cups All-purpose flour
  • 1/2 tsp Baking soda
  • 1 cup Granulated sugar
  • 1/4 tsp Salt
  • 1 tsp Vanilla extract
  • 1 cup Butter, unsalted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking sheet.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture, stirring until just combined.
  5. Drop teaspoon-sized amounts of dough onto the prepared baking sheet, leaving space between each.
  6. Press a pineapple ring into the center of each dough ball.
  7. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let cool on the sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, experiment with toppings like coconut or chopped nuts, and feel free to substitute peaches or cherries for the pineapple.
