- 4 Chicken breasts, boneless skinless
- 3 cloves Garlic, minced
- 1 medium Onion, chopped
- 1 tbsp fresh Parsley, chopped
- 1 tbsp fresh Thyme, chopped
- 1 cup Chicken broth
- 1 tbsp Dijon mustard
- Salt and pepper to taste
- 2 tbsp Olive oil
- 1 tbsp Butter
- 1 cup Heavy cream
- 1 cup Irish whiskey
Instructions
- In a large skillet, heat olive oil and butter over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 5-7 minutes per side.
- Remove chicken and set aside.
- In the same skillet, add chopped onion and minced garlic. Sauté until translucent.
- Add Irish whiskey and scrape the bottom of the skillet to deglaze.
- Stir in chicken broth and Dijon mustard, bringing it to a simmer.
- Carefully add the heavy cream, parsley, and thyme. Mix well and let simmer for a few minutes until the sauce thickens slightly.
- Return the chicken to the skillet, coating it with the sauce.
- Cook for an additional 2-3 minutes to heat through before serving.
Notes
Allow chicken to rest for a few minutes after cooking for juiciness. Use heavy cream for richness or half-and-half for a lighter sauce.
