Irish Chicken with Whiskey Cream Sauce

Ingredients

  • 4 Chicken breasts, boneless skinless
  • 3 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 1 tbsp fresh Parsley, chopped
  • 1 tbsp fresh Thyme, chopped
  • 1 cup Chicken broth
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 2 tbsp Olive oil
  • 1 tbsp Butter
  • 1 cup Heavy cream
  • 1 cup Irish whiskey

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 5-7 minutes per side.
  3. Remove chicken and set aside.
  4. In the same skillet, add chopped onion and minced garlic. Sauté until translucent.
  5. Add Irish whiskey and scrape the bottom of the skillet to deglaze.
  6. Stir in chicken broth and Dijon mustard, bringing it to a simmer.
  7. Carefully add the heavy cream, parsley, and thyme. Mix well and let simmer for a few minutes until the sauce thickens slightly.
  8. Return the chicken to the skillet, coating it with the sauce.
  9. Cook for an additional 2-3 minutes to heat through before serving.

Notes

Allow chicken to rest for a few minutes after cooking for juiciness. Use heavy cream for richness or half-and-half for a lighter sauce.
