Honey Lime Chicken and Avocado Rice Stack

A delicious and fresh dish combining honey, lime, chicken, and avocado served over jasmine rice.

Ingredients

  • 2 Chicken breasts, boneless skinless
  • 1 Avocado
  • 1/4 cup Cilantro, fresh
  • Zest of 1 Lime
  • 1 Lime, wedges
  • Juice of 2 Limes
  • 1/4 cup Red onion
  • 2 cups Chicken broth
  • 1/4 cup Honey
  • 1 cup Jasmine rice
  • 2 Cloves
  • Salt and pepper to taste
  • 1 tbsp Olive oil
  • 1 tsp Cumin, ground

Instructions

  1. In a bowl, mix honey, lime juice, lime zest, cumin, salt, and pepper to create the marinade.
  2. Marinate the chicken breasts for at least 30 minutes.
  3. Cook the jasmine rice in chicken broth according to package instructions.
  4. While the rice is cooking, heat olive oil in a skillet over medium heat.
  5. Add the marinated chicken breasts and cook for about 5-7 minutes per side until fully cooked.
  6. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  7. Dice the avocado and chop the cilantro and red onion.
  8. To assemble the stack, place a layer of rice, followed by slices of chicken, diced avocado, and top with cilantro and red onion.
  9. Serve with lime wedges on the side.

Notes

Marinate the chicken longer for deeper flavor and use fresh lime juice for the best taste.
