- 2 Chicken breasts, boneless skinless
- 1 Avocado
- 1/4 cup Cilantro, fresh
- Zest of 1 Lime
- 1 Lime, wedges
- Juice of 2 Limes
- 1/4 cup Red onion
- 2 cups Chicken broth
- 1/4 cup Honey
- 1 cup Jasmine rice
- 2 Cloves
- Salt and pepper to taste
- 1 tbsp Olive oil
- 1 tsp Cumin, ground
Instructions
- In a bowl, mix honey, lime juice, lime zest, cumin, salt, and pepper to create the marinade.
- Marinate the chicken breasts for at least 30 minutes.
- Cook the jasmine rice in chicken broth according to package instructions.
- While the rice is cooking, heat olive oil in a skillet over medium heat.
- Add the marinated chicken breasts and cook for about 5-7 minutes per side until fully cooked.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- Dice the avocado and chop the cilantro and red onion.
- To assemble the stack, place a layer of rice, followed by slices of chicken, diced avocado, and top with cilantro and red onion.
- Serve with lime wedges on the side.
Notes
Marinate the chicken longer for deeper flavor and use fresh lime juice for the best taste.
