Homemade Soup

A warm, simple, and healthy soup made with common vegetables and spices, perfect for cold days.

Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a slow cooker, combine chopped onion, diced carrots, diced celery, and minced garlic.
  2. Pour in the vegetable broth and add diced tomatoes.
  3. Stir in the green beans, thyme, oregano, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until vegetables are tender.
  5. Taste and adjust seasoning if needed.
  6. Serve hot, garnished with fresh parsley.

Notes

Chop vegetables to similar size for even cooking. Use low-sodium broth to control salt. Add fresh herbs for bright flavor.
