- 1 onion, chopped
- 2 carrots, diced

- 4 cups vegetable broth
- 2 cups diced tomatoes
- 1 cup green beans, chopped

- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine chopped onion, diced carrots, diced celery, and minced garlic.
- Pour in the vegetable broth and add diced tomatoes.
- Stir in the green beans, thyme, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until vegetables are tender.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
Notes
Chop vegetables to similar size for even cooking. Use low-sodium broth to control salt. Add fresh herbs for bright flavor.
